I wanted to post some of the recipes I have made that are Paleo. Here is one that I made last night.
Shrimp with Eggplant-Tomato Sauce
1 Med Eggplant peeled
1 Red pepper
4 Tomatoes (I used roma)
1/2 cup of water
Garlic (either roasted or fresh)
1/4 tsp crushed red pepper flakes
2 tlbs basil
Shrimp
Heat the oven to 350 peel and cut the eggplant into 1/2" slices and bell pepper in strips. Place the eggplant and pepper on a cookie sheet that has been coated with oil then brush some of the oil on the veggies. Cook until soft about 10-15 min. After they have cooled, cut into bite sized pieces.
Heat a stainless steel frying pan add olive oil add garlic and cook stirring for 1 minute. Add water and tomatoes and cook until pulpy. Stir in eggplant and peppers and red pepper flakes and basil. Cook until mixture has a sauce consistency.
Heat a frying pad with olive oil add garlic and cook stirring for 1 minute. Add shrimp and cook until pink .
Put the sauce over the shrimp.
Note: Another option would be to use spaghetti squash with the sauce over it and the shrimp on top.

Crossfit Cert
This weekend I attended the Crossfit level 1 cert. It was a great learning experience. In the cert they talk about nutrition and after listening to Andy talk I decided to do the Paleo diet in a zone format. Meaning that all food will be weighed and recorded. I am going to do the hydrostatic body fat and then at the end of the month do it again to see how much fat I've lost. Also going to be taking pictures everyday of my body and face and posting my food diary (not going to post pics of body). Andy explained the importance of recording all that is happening so at the end of the month a determination could be made to increase or decrease fat. In this approach it will be scientific and changes can be made accordingly.

Paleo Diet
I thought that a blog would be the easiest way to support each other during the "Paleo Month Challenge". Everyone that is participating can post to the blog or add comments to a post. Some will being doing strict Paleo (no dairy, grains or sugar) and some will be doing modified versions. Let's have fun doing this to support our Crossfit and life goals.
